Strawberry Mead – Racking, Back sweetening, and Bottling!

Recipe:
4 lbs strawberries (washed or sanitized, frozen, & thawed) (2lb in primary fermentation, 2lb in secondary)
Less than 1 gallon of water (I can’t really estimate? But with a full gallon I ended up with a gallon and a half because of the liquid from the strawberries)
Lalvin D-47
More than 3lb of honey. Whatever you think is best, the strawberry flavor is very strong, so I would choose something like clover, though I think orange blossom would add a level of sweetness to it as well.
Optional: vanilla bean and oak (I have not tested oak)
