1594- to make a white Hipocras
Take a gallon of wine, and ounce of Synamon, two ounces of ginger, one pound of sugar, twentie cloves bruised, and twentie corns of pepper big beaten, let all these soake together one night and let it run through a bag and it will be good Ipocras.

1 gal wine
1 lb sugar
20 whole cloves
1 oz cin sticks
2 oz ginger root
This is enough spice for 1 gallon of wine (5 bottles).
For a gallon of wine.
Grind the spices into a coarse grind.
Add 2 cups sugar, and all the spice to the wine.
Soak overnight. Strain the wine through a coffee filter.
Serve chilled or warm gently, but do not allow it to boil.
